Fast Meal Monday: BBQ Chicken

My son got picked to be apart of the All Star team which means long baseball practices EVERY night. In an attempt to continue with my vow to not eat junk food during this busy season I threw together this recipe.

Ingredients:

4 boneless chicken breast

1/4 cup of Sweet Baby Rays Sweet & Spicy BBQ sauce

1/4 cup of Worcestershire Sauce

1/4 cup of Low Sodium Soy Sauce

1/4 cup of Ketchup

Fresh Ground Pepper

Directions:

Wash and cut chicken breasts in half.

Place in plastic bag with all ingredients for 8 hours.

Grill on the BBQ for 8-10 minutes both sides.

Served with a side salad:

3 cups of mixed greens

1/2 zucchini

1 tomato

4 baby bell peppers

2 green onions

Balsamic Vinaigrette

I loved cooking when I was younger however; after getting married and having my son I began to see it as a chore. It wasn’t until I began to read and learn about play that I realized cooking and taking care of my family could be fun and I began to enjoy it once again.
